Eggnog Muffins
1 egg
1/3 c. canola oil
3/4 c. eggnog
1/4 c. rum
2 c. flour
1 T. baking powder
1/2 t. salt
2/3 c. sugar
1 t. nutmeg for garnish
Preheat oven to 350 degrees. In a small bowl, stir together egg, oil, eggnog and rum and set aside. Sift together flour, baking powder, salt and sugar in a medium-size bowl. Make a well in the center and add the egg mixture. Mix together just until dry ingredients are moistened. Spray mini-muffin pans. Fill the cups with the muffin batter 3/4 full and sprinkle the tops with nutmeg. Bake approximately 15-20 minutes or until the tops are lightly browned.
Makes 36 mini-muffins
